i dont belive so, you would need to run seperate hdmi wiring and use an hdmi broadcaster to split the signal. if you want to do video over lan you should get a network attached storage device or build a cheap pc to use as a file server then stream your ripped videos to an xbox.
You will want to make sure that you use Cat 5E and not Cat6 because the white and blue pair is twisted tighter in the Cat6 than the rest of the pairs. That being said I agree with Adam, the Gefen is a great product although it is a little pricey.

It is possible, and there are several manufactures that make a product that works great for this application. I would stress first that use these only when you have to as they require a good DUAL run of Cat5/6 that is kink and bend free, and are expensive. Always try to run a regular HDMI cable but if you cannot then I recommend either the Gefen HDMI Extender or the Key Digital HDMI Extender I have installed and sold both, and both work well. I like the key digital for that fact that is can come with a wall plate mounting option.
