The best golf GPS app I've used is "Golfshot: Golf GPS". It costs $30, but seems worth it to me. It's a whole lot cheaper than a GPS Handheld (like Garmin, etc.), and is fairly reliable. One problem I've had is that the GPS signal dropped a few times, but always came back after a bit. I imagine the signal would not drop out as much had I had an iPhone 3GS (since it has a better GPS signal).
They say there are 27,000 courses available, which is really nice; I played some small courses in Indiana, and they were available. There are also no fees after you buy it, which is a plus. There are a lot of nice features included: (a) distance to green, sand traps, layups, etc.; (b) integrated scorecard including option to email scorecard after round; and © statistics of your rounds - which can be good or depressing. Overall, I like the app a lot.

FreeCaddie is a great app. Lots of different courses, over 9000 available. The signal quality increases as your phone connects to more GPS receivers, so the longer the phone is out of sleep mode, the better the signal is. This comes into play when you pull it out of your pocket when you're playing cart golf. Very little time walking to your ball, and lots of time standing over your ball waiting for an accurate reading. However if you walk your courses, then this can be very handy, pull it out of your pocket as you walk to your ball, and you have some time to acquire a signal and gain an accurate reading as you march down the fairway drinking your Bud Light.
I used this last summer on a very small course, which I found very easily in the application. The quality of the app may have increased since that time. But it's free, so you have nothing to lose! And if you like it enough, there is a "pro" version which costs $14.99.

With all the trouble Tiger Woods has recently endured, his Tiger Woods PGA Tour by EA Sports is the best golf app I have found and played on my iTouch.
