I try to keep my vehicles clean. The only air freshener that I've ever used is Griot's Garage Leather Scent.
It never smelled like leather to me but smelled like the car had just been detailed. In any event, it's a good smell. A little goes a long way, so a bottle will last a year or more. I apply 2-3 sprays on the carpet under one of the seats which lasts a month or more.
The presidents of my company, both of whom drive expensive cars and smoke cigars, swear by Ozium. I am partial to the vanilla version of it, but the "original" scent isn't bad either.
I'm also a fan of Zaino Products, if you have leather their leather cleaner and conditioner are both fantastic and smell like fresh leather when applied.
What also helps is keeping your floor mats clean, which probably goes along with the other answers as well. I'll use a stain remover on the mats at a manual car wash, use their soap and rinse. Makes a huge difference.

I've actually read that simply sticking a dryer sheet under the seats will freshen up your interior without being too overwhelming. And chances are, you've got a whole box of those in your laundry room already.

Regular car washes, honestly.
None of the trees or any other hanging car fresheners are all that subtle. My father used to hide them under the seat, and they would still stink up the car in a matter of hours.
Keeping the car clean, leaving windows or sunroof open when possible, and not smoking is the best way of keeping your car scentless.
