Something that shows you a) have some idea what she is interested in b) you want to do things she is interested in c)are willing to put the time into plan it. Early on I would avoid overnights or long car trips/flying and it doesn't need to be expensive - a hike, a picnic, a museum exhibit, something unique. The point is to show you've been paying attention for a while.
It depends on how far you are into the relationship. For up to a month, paying for dinner and such should be enough - you don't want to spoil her. Two to four months, nice gestures such as sending flowers to her at work and surprising her with that item she's been talking about are good, non-extravagant measures that will show you're thoughtful and generous; just don't shower her with gifts and make her feel too important. After six months, well, ask again if you get that far.

I think something really small and relatively cheap. If you listen really well you'll hear about something that she/he will like and just surprise them. It doesn't have to be anything big....at this stage in the game...it really IS the thought that counts.
