Wilderness Trail Bottled-In-Bond Bourbon
It's getting tougher and tougher to stand out in the bourbon industry, but Wilderness Trail has done just that. The Danville, Kentucky based distillery has a trio of products, and this bottled-in-bond bourbon is the centerpiece. The high-rye bourbon is comprised of just 12 barrels per batch and benefits from the distillery's proprietary Infusion Mashing Process, where they use the exact amount of heat to gelatinize starches without degradation of the quality of the grains. The result is a softer, more flavorful spirit and plays nice with their unique yeast strains. Wilderness is also the first Kentucky distillery to use a clean steam boiler to kick out any boiler chemicals or off-flavors.
