Hand-forged by third-generation Master Bladesmiths in Sakai, Osaka, this knife is made using pure carbon White Steel #1 — as close as you can come to the tamahagane steel of ancient Japanese swords. That steel is turned to black in a highly secretive, hand-forging process that provides outstanding sharpness and edge retention. Its hand-carved charred hardwood handle anchors the well-balanced design, with a double-beveled chin to enhance fluidity for both right- and left-handed chefs and a precision front tip meant for scoring meats and vegetables.
