ReAnimator Finca El Jutal Coffee
All coffee is processed before roasting, typically either by washing the fruit away or by naturally allowing the cherries to dry in the sun. The Honey process sits somewhere in the middle, removing some of the fruit, but not all, allowing the sticky coating on the outside of the beans to oxidize and the coffee to continue fermenting. It's this process that's used in the making of ReAnimator's Finca El Jutal release. Grown in a small village in the Honduran mountains, it offers a rich flavor profile of cherry cola, blackberry, and honey pastry, making it a refreshing change from more common washed roasts.
