Seventy One Gin
71 days after this gin was put into Spanish virgin oak casks to age, the distillers had their first taste. And at that moment, they felt it was exactly what they wanted it to be. Named for that important night in Rotterdam, Seventy-One gin is the creation of fashion photographer Mert Alas who takes cues from the world of perfume for the process as well as the packaging. The complex spirit matures in sherry casks and American oak in addition to the aforementioned Spanish oak, and offers notes of citrus, smoke, and a jasmine-esque flavor from the infusion of an orchid cactus known as Queen of the Night, which blooms for only one night a year.
