The pork comes from pigs raised on Midwestern farms and is hand-cured for eight days in pink salt and brown sugar made from real molasses. Bill E turns the bellies every other day to further improve the flavor, before cold-smoking them in hickory for a sweet, savory, and tender result. Available by the pound, sliced or unsliced.
