Derrumbes Michoacan Mezcal
Located in Western Mexico, Michoacán is the home of two iconic agaves and a unique ancestral distillation technique. Derrumbes created this Mezcal expression pulling from this historic region, highlighting Chino and Alto agaves which bring notes of mature fruit and a subtle herbaceous character to the spirit. The agave is fermented under a red clay floor in pinewood lined pits to protect it from low temperatures before distillation in Michoacán's own Philippine-style stills made of wood staves and copper over direct flame.
