Peaks Coffee is based in Syracuse, NY and believes that life is about enjoying the peaks and enduring the valleys. The former is certainly true of this coffee, which originates at a farm in Corquín, Copan, Honduras that was founded in 1865. The farm is currently run by a 4th generation family member and the fruits of their labor include these beans. The beans undergo a method called the honey process, which involves having the coffee cherries skins and pulps removed before they are dried without washing off the sticky-sweet outer layer. The resulting cup is marked by notes of peach, tropical fruit, and clover honey.
