Sala Gaspare

Gaspare Campari came up with the formula for his namesake drink in 1860. Now an underground bar bearing his first name is opening in the laboratory where the Italian aperitif was born. Sala Gaspare is run by the award-winning Camparino in Galleria cocktail bar, and will seat just 12 guests at a time — four at the bar proper, and others in the luxurious sofas and armchairs that line the intimate space. The interior, designed by Vudafieri-Saverino Partners, intersperses symbols of Milan with wood paneling and soft lighting, while the menu consists of recreated vintage recipes, riffs on those ingredients, as well as classics like the Negroni and Boulevardier, served alongside snacks from the kitchen.
