Tuna Scope
Built for sushi restaurants, Tuna Scope uses machine learning and AI to find the best cuts of yellowfin tuna. By working with real examiners, data for roughly 4,000 fish was used to train the AI, which looks at measures like sheen and color to determine the quality of the fish. It's already had a trial run at a Tokyo restaurant, where 1,000 pieces of sushi were served over five days with a satisfaction rate of 90%. Dentsu, the company behind the app, hopes to expand its use globally and use the same technology in other industries including agriculture and healthcare.
