It's leaner than beef, rich in iron, and is lower in fat, cholesterol, and calories. But that doesn't matter very much unless it tastes great, so it's important to know that in blind taste tests 80% of tasters have chosen it over a traditional beef steak. The ribeye can be cooked any of the ways you'd prepare a regular steak and provides a more delicate flavor than beef with subtle earthy, mineral notes.
