Sourced from Eastern Spain and parts of Vaucluse, France, this Black "Perigord" Winter Truffle is a rare treat. Its rich flavor, which combines earthy tones and scents with cognac, chocolate, and musk, comes to life when gently heated, allowing the truffle to be gently heated, and thus frozen to prolong shelf life. Pigs were originally used to find the Perigord, but following several hunters losing fingers to the ravenous creatures, trained dogs are now used instead. Our offering is sourced directly from pools of hunters and is flash-frozen to preserve freshness. Available in 1/4 lb. and 1 lb. batches.
