Empirical Ehime Cask 03
Named for a Japanese prefecture, Empirical's Ehime Cask 03 is a unique spirit. It starts as their floral, koji-based Helena spirit, which is aged in American white oak ex-bourbon casks for three years to give it added complexity. The result is a sweet, caramel-colored drink with a fruit-forward palate, subtle wine-line nuances, and a clean finish that's ideal for sipping. Bottled at a cask strength of 54.3% ABV, each bottle comes with a copy of a short graphic novel about its predecessor, Ehime Cask 01, printed and folded from a single sheet of paper.
