Ritual Sister Smoked Pineapple Spirits

North Fork-based Matchbook isn't your normal distillery. Instead of only making their own spirits, they allow anyone to come in and create their own small-batch creations, using Matchbook's know-how, ingredients, and equipment. However, when the world went into lockdown, the team behind the company gathered together, acquired two tons of pineapples, dug a pit, and smoked them. After tossing them into fermenting bins with a hint of Champagne Yeast, letting that sit for three weeks, and then pressing off the juice putting it into a copper pot column still, Ritual Sister was born. Roasted pineapple, smoke, and earth come through in each sip, making it equally enjoyable on its own or in a smoky, fruity cocktail.
