Noma has been one of the best restaurants on earth over the past decade. And some of the flavors that helped build their reputation are about to be available for your kitchen. They've begun to develop a line of garums; umami-rich sauces that are keys to their vegetarian and vegan menus. Garums are a thousand-year-old culinary tradition and Noma recommends them for those that are shifting to a more plant-based diet but that still want the deeper flavors that meat and fish provide. Currently fermenting, the initial release is a vegan smoked mushroom garum made using organic mushrooms that are crushed with salt and rice koji.
