Making whiskey and making fine chocolate have a lot in common, requiring time, care, and attention to detail. To celebrate this fact and continue its research into sustainable packaging, The Macallan Whisky Maker Polly Logan took a trip to visit Jordi Roca at the three Michelin star restaurant El Celler de Can Roca, and The Harmony Collection Rich Cacao is the result. The single malt expression was created by Logan seeking out chocolate notes in sherry-seasoned European oak casks, and balancing their slight bitterness with vanilla notes imparted by sherry-seasoned American oak casks. In the end, she arrived at a rich whisky with a dark chocolate profile that pairs wonderfully with rich chocolate. It arrives in a 100% recyclable gift box made using discarded husks from cacao pods, a byproduct of the chocolate-making process.
